Donations For Food Drive Accepted Until December 5

If you haven’t made your donation to the Food for Families Food Drive–it is not too late. We will be accepting non-perishable food donations until Thurs-day, December 5. You can drop off your non-perishable food items in Coffee-ville at Renasant Bank, The Drug Store, Coffeeville Public Library, Occasions and Petals or the Extension Service. Dropoffs in Water Valley include Larson’s Piggly Wiggly, The Other Place, Blackmur Library and Fred’s. All food collected will benefit people in our area.
The Mississippi Home-maker Volunteers  (MHV) do many good things in our community as well as in our state and internationally.  One of the projects that they are working on is collecting coke tabs that will be donated to the Ronald McDonald House.  If you have coke tabs please bring them to the Extension Office for this project.  
Due to Thanksgiving Holidays-The Healthy You Exercise Class will not meet on Wednesday, November 27 and Friday, November 29.
4-H Upcoming Events:
Saturday, December 7th – 1 p.m. – Water Valley Christmas Parade (walking unit )
Saturday, December 14- 2 p.m. – Coffeeville Christmas Parade (walking unit)
Thursday, December 12-4 p.m. – Christmas Nursing Home Visit (Christmas Carols and hand out sun catchers). This will be in place of our December meeting.

A Healthier Thanksgiving Feast

The holidays are upon us and that means family gatherings and delicious foods, but if you are not careful it could also mean extra pounds. To keep the holiday pounds off this holiday season consider healthier versions of your stuffing recipe.  
Better Stuffing
Serves: 16
Serving Size: 1/2 cup
Total Time: 55 min
Prep: 5 min–cook: 50 min
Ingredients:
1 box stuffing mix, prepared without margarine*
1 cup each: diced apples, onions and celery
1 Tbsp margarine
3 cups cooked brown rice
1 cup low-sodium broth
Directions:
Sauté the apples, onions and celery in the margarine. When they are soft (about 3-5 minutes), add the prepared stuffing, cooked rice and broth. Combine well and place in covered casserole or baking dish. Bake for 30-45 minutes at 350 °F.

Chef’s Tips:
*Use reduced sodium Stove Top Stuffing. Makes 8 cups. You can bake this during the last hour with your turkey so they all come out at the same time.
